Guiltless Apple Cobbler

We’re in the midst of Fall which means apple picking season is in full swing! Here is an apple cobbler recipe I developed to maintain my clean eating habits while enjoying a delicious dessert. Gluten-free, dairy-free, and low sugar. But remember to watch your portion size. Enjoy!

GUILTLESS APPLE COBBLER

INGREDIENTS:

Fruit Filling
4 medium baking apples peeled and sliced thin
1 cup water
2 tsp cinnamon
4 tbsp brown rice flour
6 tbsp granulated Splenda (or 4 ½ tsp Stevia extract powder)

Biscuit Dough
½ cup plain unsweetened almond milk
½ tsp white vinegar
1 cup brown rice flour
1/3 tsp baking soda
2/3 tsp cream of tartar
1/4 cup olive oil
1 tbsp Splenda (or ¾ tsp Stevia extract powder)

DIRECTIONS:

Preheat oven to 375 degrees.

Mix white vinegar with almond milk and set aside for at least 5 minutes.

Stir the fruit filling ingredients together in a large pot over medium heat. Cook until apples are soft and mixture is thickened (about 10 minutes). Pour the mixture into a casserole dish.

Prepare the biscuit dough by combining brown rice flour, baking soda, and cream of tartar. Add oil and stir. Add the Splenda (or Stevia) and the almond milk/vinegar mix. Stir with a fork until the flour mixture is moist.

Drop the biscuit dough, tablespoon by tablespoon, on top of the apples. Place the dish in the oven and bake for 20 minutes until biscuits are golden brown. Serve warm.
